As I was pulled from my dreams this morning by the buzzing of my alarm, the first thought in my mind (as it is every morning) was, “Where’s my coffee?”
Ah yes, coffee….that wonderful energizing morning pick-me-up.
As the aroma of brewing coffee filled the air, I gathered supplies to help make my coffee taste great. (I am NOT a black coffee fan…kudos to you if you are!!)
I opened the fridge and…….GASP…..
….my wonderful peppermint creamer was EMPTY!
I didn’t realize my creamer level was low, so this necessity did not make it onto my shopping list last week.
Desperate times call for desperate measures.
I turned to Pinterest.
If you follow me on Pinterest, you may have noticed that I pinned several “non-dairy peppermint creamers” onto my drinks board last week. Perfect timing!
I gathered my supplies – who knew it was ingredients I already had at home? Money saved is a score in my book! (Bonus: This creamer is homemade without all of the crazy chemicals included in store-bought liquid creamers! Sweet!)
I cautiously tasted this new creamer in my coffee and I have to say, I love it!
I’m a happy girl once again!
If you are curious, yes….Fall decorations are still up in my house and I’m using a Christmas mug this morning. I love this time of year, what can I say? :0)
Non-Dairy Peppermint Mocha Coffee Creamer Adapted from: Pitcher and Plate
Ingredients:
- 3/4 Cup Coconut Milk (not coconut water)
- 4 TBSP Maple Syrup
- 1/4 tsp. Vanilla Extract
- 1/4 – 1/2 tsp. Peppermint Extract (Depends on how strong of a peppermint flavor you are looking for. I added 1/2 tsp and the flavor is strong but not overpowering.)
- 1 TBSP Unsweetened Cocoa Powder
Whisk all items together in a bowl. Pour into an airtight container, serve with a hot cup of your favorite coffee, and enjoy!
Mixture will thicken when refrigerated. Store up to 1 week in fridge.

DeleteI've never tried to make my own creamer, but sounds like a great idea! The only way I can drink coffee is if it doesn't taste like coffee :) So I'm a heavy creamer and milk kinda gal!

DeleteWhat a great discovery! I really don't like all the artificial stuff in so much of what we buy at the grocery store. If I drank coffee, I would make this today! However, my beverage of choice is hot tea!

DeleteI'm not a coffee drinker, but Trader Joe's has a peppermint green tea around the holidays that I buy several boxes of to get me through the year.

DeleteI never thought to make my own coffee creamer. Great idea! I add peppermint extract to other drinks to make them minty. I did that in my kale smoothie today.
