Recipe: Freekeh Foods Tomatoes & Chicken (& A Giveaway!)

Recently, I was given the opportunity to try a new (to me) grain - hand roasted green wheat also known as Freekeh! Sounds intriguing, right? Never one to turn down the chance to try something new, I agreed!


I decided to test out this new grain with a household favorite recipe that I'll share with you in a minute, but first...a little bit about Freekeh! 

One serving of Freekeh includes:
  •  6 g of protein (up to three times the amount of brown rice)
  • 4 g of dietary fiber (up to three times the amount of brown rice)  
  • Vegan 
  • Organic
  • Non-GMO verified
  • Low in sodium

Freekeh comes in a variety of flavors from original to rosemary sage and tamari.


This grain is super easy to cook - all you need is a bit of water, a pot, and a measuring cup!



Freehek can be found at a variety of retailers including Whole Foods, Market Basket, Wegmans, Fresh Market, Sprouts, etc...

As mentioned earlier, I decided to try my own recipe with Freekeh, so here it is! 

Freekeh Foods Tomatoes & Chicken with Cheese

 Ingredients:
2 cans of rotel
5 thawed chicken breasts
Shredded cheese (about 3/4 cup)
Grain of choice (I chose Freekeh original for this recipe)
Salt/pepper/seasoning to taste
Vegetable/sides of choice

Directions:
Thaw chicken breast - stab each one with a fork so it can soak up the flavoring.
Season each chicken breast to taste.
Place chicken in a 13x9 baking dish.
Pour rotel on top of chicken breasts, making sure to coat the bottom of the pan.
Cover with foil and bake at 375F for 30 minutes.
In the meantime, prepare Freekeh (or grain of choice) on stove top according to package directions.
Also prepare vegetables/sides while chicken is cooking.
After 30 minutes, remove foil from chicken and bake for an additional 15 minutes or until tops of chicken are golden brown.
Remove from oven and sprinkle with cheese.
Return to oven for 2 minutes or until cheese has melted.
Serve and enjoy!



I really enjoyed the taste of Freekeh! The texture was nice and it blended well with my meal! Once cooked, the texture really reminds me of quinoa which I also love! This is a nice replacement!

    I have heard of Freekeh before however I've actually never seen it. It looks pretty good in the pics. I would love to try it.
